Popular across many cultures for many centuries, salted fish is known as bacalao in Spain or bacalhau, in Portugal, and is actually considered Portugal’s national dish. In the Caribbean the product is known generically as codfish or saltfishand is an important part of the culture of the islands providing both salt and protein.
